Julie’s Yummy Mixed Veggie Salad with Chicken


J.A’s Yummy Dinner Salad (created by throwing whatever was available in the fridge and thanking heaven that it tasted good in the end)

(Ingredients for 1 serving)
½ cup Spinach (Reminder: as with any salad, the greens are meant to be the bed for the substance, not the substance itself)
¼ cup Green Beans, raw
¼ cup Snap Peas
½ cup Tomato, diced
½ cup Yellow Bell Pepper
3-4oz rotisserie chicken, chopped (free range is healthiest)
1 tbsp. Organic Hemp, shelled

1 tbsp. Sesame oil (cold or expeller pressed is healthiest)
1-2 tsp. Red wine vinegar
Grated Fresh Ginger, to taste
1 pinch Celtic salt (optional)
1 tsp. Low Sodium Soy sauce (or gluten free Tamari sauce http://www.san-j.com/product_info.asp?id=3)

Mix all ingredients and serve. Or make it in the morning and chill it for dinner.
