J.A.Stuffed Squash

I had foodstuff sitting around that needed eating and this is what came of it. Very tasty.

Ingredients for 1 serving:

1/4 lb organic ground buffalo, cooked

1/4 cup diced radish (add the leaves if you want more green)

1 green onion, chopped

1/2 cup fresh broccoli, chopped

1/3 cup favorite salsa (this is where you add heat if you want it.)

1/2 acorn squash, freshly baked

Mineral or sea salt, to taste

1 Handful Daiya Mozzarella

Dry saute the veggies for 1 minute, adding water to prevent sticking. Add meat and salsa and mix until warm. (Add salt only if necessary)  Stuff it into the cooked squash, sprinkle with Daiya, and put it in the oven until the cheese begins to melt.

ENJOY!

P.S. I bet you could do this with leftover turkey, too
